Warm Spinach, Quinoa, and Artichoke Salad

Ingredients:

  • 1 cup cooked quinoa
  • 1 jar Perfect Choice Marinated Artichoke Quarters
  • 4 large handfuls chopped spinach
  • 2 cups cherry tomatoes
  • 1 feta cheese (desired amount), chopped
  • 1 garlic clove, minced
  • olive oil
  • pinch of salt and pepper

Preparation:

In a medium-hot pan, add olive oil and minced garlic. Then, add the spinach, cherry tomatoes, salt, and pepper. Cook until the spinach wilts. After the spinach has wilted, add the cooked quinoa and mix thoroughly. Slice the Perfect Choice Marinated Artichoke Quarters, and sauté them in a pan with a bit of olive oil. Combine the sautéed artichoke hearts and chopped Feta cheese with the spinach and quinoa mixture. Drizzle with olive oil and sprinkle with pepper before serving. Best served warm.
