Cheesy Chicken Breasts with Artichoke Bruschetta

Ingredients:

  • 2 large boneless chicken breasts
  • 1 oz mozzarella cheese
  • ½ jar Perfect Choice Artichoke Bruschetta
  • basil leaves
  • pinch of salt and pepper

Preparation:

Preheat the oven to 355°F (180°C) Slice the chicken breasts in half. Heat a pan or grill to medium-high heat. Add olive oil. Season the chicken breasts with salt and pepper.  Cook the chicken breasts for 3 minutes on one side without flipping. Next, flip the chicken breasts and cook the other side for 3 minutes.  Place the chicken breasts in an oven tray and sprinkle them with the grated mozzarella cheese.  Slide the tray into the preheated oven for 10 to 15 minutes or until the cheese is golden brown. Top with Perfect Choice Artichoke Bruschetta and a few basil leaves. Serve hot and enjoy!
