Pappardelle Pesto with Prosciutto

Ingredients:

  • 1 jar Perfect Choice Basil Pesto
  • 1 cup flour
  • 2 eggs
  • 1/3 cup olive oil
  • warm water for the dough 
  • 1 cup Cherry tomatoes, halved
  • 5 slices of prosciutto
  • 5 grated walnuts
  • 1 tsp salt
  • bay leaves
  • parmesan cheese (optional, freshly grated)

Preparation:

In a bowl mix the flour, eggs, olive oil, one teaspoon of salt, and warm water until it forms a dough. Note: the dough should not stick to your fingers. Stretch the dough until it is very thin. Cut the dough into a rectangle and then cut it again into one-inch strips.  Boil the pasta for 5 minutes (add salt and bay leaves for extra flavor) . Once the pasta is cooked, drain it using a sieve. When the pasta is dry, add the jar of Perfect Choice Basil Pesto, cherry tomatoes, grated walnuts, and prosciutto. Toss the mixture to evenly distribute the ingredients.  Top with freshly grated Parmesan cheese and ENJOY!
